I want to give my teacher a christmas gift but he is jewish, he is very nice im sure i wouldnt offend him in any way but whats the proper way to give a gift? should I say happy hanaka?

I would recommend leaving the issue of religion out of things. You could easily get around the whole issue by giving him a "holiday" gift and merely saying "happy holidays!" That way, you don't have to worry about offending him or embarrassing yourself.

I want to make all my christmas gifts this year, not for financial reasons but because I want to give meaningful christmas gifts. I was thinking of making all the women jewelry in their favorite colors. Is there any other ideas? Also, what are some crafty christmas gifts for men?

Bake them some sweets. Everyone appreciates food, and it's homemade.

I do like the jewelry idea, although that can get extremely expensive.
